Kimchi
All our kimchis share the same base recipe, featuring organic apples, no added sugar, Celtic salt, organic garlic and ginger. Kimchi, unlike kombucha, ferments naturally with the bacteria present in the vegetables.
Watercress: Grown in Surrey Hills, this kimchi offers a peppery and mustardy flavour without overpowering the unique watercress taste.
White Cabbage: Made with British white cabbage, this kimchi has a warmer, sweeter flavour due to the added chilli.
Pumpkin & Mooli: Sweet, spicy, warm and savoury. A true umami symphony of flavour. Handcut in cubes for extra crunch.
Kimchi is the perfect companion of scrambled or soft-boiled eggs and can also be enjoyed as a cheesy toastie with mature cheddar. One tablespoon of kimchi per day is enough to diversify your gut bacteria population.
Kombucha
Kombucha is a probiotic drink made by feeding SCOBY (symbiotic culture of bacteria and yeast) aka the kombucha mother pure cane sugar in a blend of black and green tea. All our kombuchas are unpasteurised with a pH below 4 to ensure a milder yet probiotic-rich beverage. We add sugar only during the fermentation process, allowing the natural fruit to differentiate each batch based on seasonality. Our kombucha is naturally flatter than the average but becomes more bubbly in warmer months.
